Coffee is an important export product for Peru. Over 220,000 families earn their income from growing coffee. The plantations are often no larger than 3 or 4 hectares and the producers are mainly independent, the number of cooperatives is relatively low.

El Zorro is a coffee from the Callayuc district in Cutervo, a region rich in culture and traditions that its inhabitants have managed to preserve to this day. There are several coffee cooperatives in the Callayuc district, including the one that produces this coffee. Goti and her husband, José Manuel, both work in this cooperative. Since José Manuel comes from a different region, which is quite rare, he is affectionately called "El Zorro," which means fox (derived from the fox's legendary adaptability).

Honey processed involves a unique method where coffee cherries are de-pulped, and the sticky mucilage layer is left on the beans during drying, resulting in a sweeter, more complex flavor characteristics than washed or natural processed coffees. This process also uses less water than washed processing.
