James Gonzales

James' family has been growing coffee for decades now. He has helped his father grow coffee ever since he was a kid. When specialty coffee buyers started to shake things up in Cajamarca a few years ago and started to look for higher quality lots, James and his father realized they had to follow up. They planted Yellow Caturra first and Geisha a few years later.

As the new generation of farmers in Peru, James represents the future of high quality coffee. He is very ambitious and eager to learn more about fermentation and the impact on cupping score. This is also the first time James and his father process coffee as based as a honey protocol with additional steps in the fermentation.

The best producers of Peru have challenged themselves in processing a unique micro lot for the annual Peru auction.

In 2021 James and ihs father had the first harvest of Geisha which they mixed up with their Yellow Caturra due to the low production. For 2022-2023 they finally had a higher amount of coffee ready to sell for the international market with excellent quality.

Geisha has excep­tion­al­ly high qual­i­ty at high alti­tudes. The term ​“Geisha” is often applied to oth­er cof­fees that do not share the dis­tinct genet­ics of Pana­man­ian Geisha.

Summary of production

Honey Anaerobic

36 hours anaerobic fermentation in cherry in closed plastic bags. De-pulped and put into bags again for 72h. The beans were laid out in a thick layer (approximately 5cm high) in open air to continue fermentation for 48 hours. Then it was dried for 14-15 days in solar tents with intermittent hours under the sun every day and avoiding the most intense sunlight hours.
