"My family has owned this 80 hectare farm since 1920."

- Roger Peralta

Summary of producer

Roger Peralta

Finca La Argentina is located on the mountain sides of Nueva Segovia. From the farms, you can enjoy amazing views of the forests and mountains around Jicaro and San Fernando.

Because of his hard work and dedication, several of his family’s farms are now focused on making unique coffee by selling individual batches instead of just making a lot of coffee for export. In recent years, some of these farms have won awards at the Cup of Excellence competitions.

Roger's nephew, Julio, wanted to create a sustainable future for Nicaraguan coffee by exporting and promoting small, unique batches of coffee. He encouraged his family and other farmers to try new ways of growing coffee and is very passionate about the idea that Nicaragua has the right conditions and tools to make great tasting coffee.

Summary of production

Washed WX

Ripe cherries are handpicked and sorted between December and March. There is a wet mill on the farm where the ripe red cherry is deposited and weighed from each picker. The cherries then enter floatation tanks where the ripe and unripe cherries are separated by density. Ripe dense cherries are then pulped and the beans are then fermented for between 14-18 hours before being washed in channels lined with stones which provide friction to remove any remaining mucilage. The washed beans are then taken to the drying patios at the nearby mill of San Ignacio where they are regularly turned by a rake to ensure even drying. The overall drying lasts 10 to 12 days.
