Jose Israel Morales Tubac

The region where the growers are located is in the outskirts of Comalapa and San Jose Poaquil with two villages in the mountains between the cities of Tecpan and Chimaltenango. These high altitude areas are home for several indigenous Mayan communities. These have been forced into more rural areas ever since the liberation of land in Guatemala in 1870 when the government sold a lot of the ground to German and Dutch settlers.

Jose and other producers have been selling to local cooperatives in the past, who then sold the entire blended harvest of these farmers to a beneficio in Guatemala City for commercial export. Without any transparency and traceability on quality and destination of the coffees, growers like Jose are often not knowing much about their product, doomed to sell locally for no differentiation and without receiving any feedback on their work. This Bourbon and Caturra blend of his Finca Morales shows the actual capacity of many of these producers and marks his first international sale under his own name, which we hope will not be his last.

Bourbon is one of the most cul­tur­al­ly and genet­i­cal­ly impor­tant C. ara­bi­ca vari­eties in the world, known for excel­lent qual­i­ty in the cup at the high­est altitudes.

Caturra com­pact plant with good yield­ing poten­tial of stan­dard qual­i­ty in Cen­tral Amer­i­ca. Very high sus­cep­ti­bil­i­ty to cof­fee leaf rust.

Summary of production

Washed WX

Coffee cherries are floated in water to remove defects before de-pulping. The coffee beans are thereafter fermented for 24 hours in water followed by washing the beans to remove the mucilage with clean water. The parchment in then dried on raised meshes for 2-3 weeks. As a final step, the parchment is stored in a well-ventilated warehouse with controlled humidity (11-12%) before dry milling.
