"Buku Sayisa means blessed valley and is the name of the valley in which the site is situated."

- Smallholders

Summary of producer

Smallholders

This altitude typically produces high density beans and relatively smaller screen size, which contributes a lot of this unique flavorful cup. Due to its altitude, harvest usually occurs later than other normal coffee growing altitude regions. The farmers delivering cherry here deliver on horseback due to the uneven terrain around the site.

These farmers are dedicated to organic practices and nurture coffee in harmony with the natural environment. The landscape is adorned with shade trees like Enset, Shenkora, Birbira, Bisana, Wanza, and Sholla.

The cherries are handpicked and only fully ripe cherries are selected for further processing. The cherries are then tightly packed inside a big sealed plastic container and left fermenting anaerobically (without oxygen) for 18 to 24 hours. During this process microbes consume all the oxygen in the container meaning that microbes that typically breathe oxygen have a harder time surviving and those that flourish on carbon dioxide (the typical byproduct of oxygen-breathing microbes) are able to dominate fermentation. After fermentation cherries are carefully removed from the container and laid to dry in direct sunlight on raised beds for approximately 2 to 3 weeks. Workers turn the coffee frequently to promote even drying.

Summary of variety

Heirloom

Heirloom (or sometimes Landrace) is an umbrella term that refers to all the coffee varietals endemic to Ethiopia and can consist of multiple unknown genetical varieties, i.e. a natural mix.
