Smallholders

Adnan is a privately-owned washing station that is located in the Hamasho kebena (village) in Ethiopia’s Sidama zone. The washing station is one of 26 owned and managed by Testi Coffee, a family-owned company founded by Mr Faysel A. Yonis. The site was built by Testi in 2021 as a ‘premium’ facility, and selected for its natural advantages – including its high elevation, the surrounding region’s characteristics and access to fresh, clean water.

The Sidama region is known for producing the most coffee at the highest grades in Ethiopia, and the geography explains why this is. This region spreads across fertile highlands, where half of the land is cultivated. The surrounding rivers and lakes along with the very high elevation results in cool weather and fertile soil. These factors, in combination with over 100 inches of rainfall per year, cause the coffee to ripen slower than in any other region in Ethiopia.

JARC (Jimma Agricultural Research Centre) varieties are improved Ethiopian coffee selections developed for high yield and resistance to Coffee Berry Disease (CBD), particularly the "74" series released in the 1970s. Key varieties include 74110, 74112, 74148 and 74158, which are derived from mother trees in native forests and known for their distinct, fruity and floral profiles.

Summary of production

Natural NX

At the washing station, cherries are preselected. They are then immersed in a water tank to remove floaters, unripe, overripe and defective cherries. The cherries are then carefully selected and placed in 25kg batches with a thickness of 5cm onto the dry raised bed. Testi's team turns the cherries over 5-6 time's a day to ensure an even sun exposure. Once the coffee cherry reaches an adequate moisture level of 11-12% which can be reached within 15-20 days depending on the weather condition. Later, the lot is relocated to the nearest warehouse for storage while awaiting export.
