Mario Hervas

Mario´s farm, located in the region on Nanegal close to the capital, Quito, is blessed by an array of natural water sources and a landscape with a view over the surrounding valleys.

Finca Meridiano exclusively produces Typica Mejorado and the seeds are germinated by Mario himself. Mario is renowned for having once been a rose farmer.

Mario's adventure with coffee began in 2011 when he was inspired to start growing coffee as an agronomy engineer and as an avid coffee drinker. Back then, he made a fresh start when purchasing the farm. He cleared the soil and planted coffee where there had only been sugar cane.

Ecuadorian specialty coffee is characterized by its diverse microclimates, fertile volcanic soil, and high elevations in the Andes, resulting in beans with distinctive flavor profiles. These coffees often exhibit bright acidity, medium to full body, and complex flavors, ranging from fruity and floral to sweet and chocolatey.

Pinchica coffee, grown on farms neighboring cloud forests and towering volcanoes, exhibits a delicate balance of acidity and body. Pichincha's beans encapsulate the region's rich biodiversity with flavor notes that often hint at tropical fruit, floral undertones, and a touch of nutty sweetness. The cool mountain temperatures combined with the equatorial sun provide a slow maturation for the cherries, helping to develop deep, complex flavor.

By utilizing the organic material left over from the pulping process, Mario's is lowering the amount of fertilizer used by producing organic compost.

Mario uses a methodical washing technique that preserves the delicate scents of rose hips, lemon zest, and honey.

Typica Mejorado is a hybrid of Bourbon and Ethiopian Heirloom/Landrace. The name carries no connection to the Typica lineage.

Summary of production

Washed WX

Ripe cherries are carefully picked by hand and floated to remove defects. Cherries are depulped and fermented in water basins for 20 hours. Afterwards, the parchment is dried on raised beds for 12-18 days.
