Yobani Ramos & Yaved Guarnizo

Yobani Ramos and Yaved Guarnizo have 6 hectares of land planted with Caturra, Colombia, Geisha and Pink Bourbon. Both Yobani and Yaved are focused on keeping a constant high quality and since we started working together they have done large investments and improvements on the farm and in the beneficio. The beneficio was renovated a few years ago with new tiled fermentation tanks and vessles that are easy to clean. They have also invested in new drying beds that are covered by shade nets to slow down the drying process.

Yobani and Yaved are growing their coffee according to organic and biodynamic practices, caring for the plants and wildlife on the farm. Yaved is interested in biodynamic studies and is making three different composts/compost teas as well as a couple of clever natural pesticides. Due to the high elevation, the cooler average temperature allows a slow ripening that builds up lots of sugars and complex flavors in the coffee cherries. The cherries are bursting with flavor of papaya, lychee, red berries and melon. Yobani and Yaved are constantly pushing to be better and they produce some of the best coffees we have come across. Anne has visited twice per year since we started working together. They don’t only have one of the most beautiful farms in the world but they are also some of the most generous and humble people out there. Spending time with them at the farm is always a highlight.

Gesha

The Geisha (or Gesha) cultivar is a highly prized variety of Coffea arabica known for its exceptional and distinctive flavor profile. It originated in Ethiopia but gained fame after its introduction to Panama. Geisha beans are characterized by their long, slender shape and complex, aromatic flavors often described as floral, tea-like, with notes of jasmine, bergamot, apricot, and peach.

Summary of production

Washed WX

Cherries are picked every 15 days when they reach peak ripeness and are then left overnight in cherry. The coffee is de-pulped the next morning before undergoing a 36-40 hour dry ferment. It’s rinsed three to four times and then moved to raised beds, where the coffee is dried for 18 to 22 days under white mesh.
