Carnaval is a celebration of the coffee-growing tradition of the Jaramillo and Hoyos families, representing a harmonious blend of agricultural expertise and innovative processing. Cultivated at La Carmelita farm in Calarcá, Quindío, at an altitude of 1,320 meters above sea level and owned by Huberto Jaramillo, this Castillo variety coffee is meticulously processed by his nephew Luis Miguel Hoyos at Villa Gloria farm.

La Carmelita, owned by Luis Miguel’s uncle Huberto Jaramillo, has been part of the family for many years. It recently began cultivating specialty coffee under Luis Miguel's influence, who convinced his family of the potential in high-quality, specialty coffee production. While the farm grows the coffee, the actual processing takes place at Luis Miguel’s own facility, Villa Gloria, which is equipped to handle the innovative processing techniques Luis Miguel champions.

Beans are carefully selected for uniformity and quality. Once selected, the beans are placed in sealed tanks without oxygen. This step lasts for one week (240 hours). The fermentation process is closely monitored to ensure optimal conditions are maintained. After fermentation, the beans are spread out to dry under controlled conditions, which helps to stabilize the flavors developed during fermentation.

Castillo is the most common variety grown in Colombia. Carefully created for its resistance to leaf rust, Castillo is a hybrid variety that now makes up 40% of Colombia’s coffee crops. It is a “dwarfed” tree that can be planted in high density, resulting in generous crop yields.
